Safflower Oil for Cooking

Safflower oil is lower in saturated fats and higher in beneficial monounsaturates than olive oil - this helps prevent coronary artery disease. Also, monounsaturates such as oleic safflower oil tend to lower blood levels of LDL (“bad” cholesterol) without affecting HDL (“good” cholesterol). Polyunsaturated fats, such as linoleic acids, are associated with lowering blood cholesterol.

More and more, Safflower oil is becoming available as a healthy alternative for cooking oil.
